POTATO: Potato is a tuberous, starchy crop from the perennial nightshade Solanum tuberosum L. They are sometimes called spuds. Even though they are vegetables, they are very rich in starch. Just like wheat, rice and maize, it is also an important part of the world's diet. It contains a variety of vitamins and minerals. Chlorogenic acid constitutes up to 90% of the potato tuber.
Recipe 1: Alu Kabuli
Preparation time 5 minutes / cooking time 5
minutes / serves 2
Boil two big potatoes (chandra mukhi)
with 1 tsp of salt in water
Cool, peel, cut into half
Cut the halves from the middle then chop into
medium size slices
Add white lime juice (approx 4 tsp) or as per
taste
Add one tsp chaat masala or as per taste
Now ready to pack for a yummy lip smacking
tiffin
You can also add some sprouts/chopped
cucumber, tomato, coriander leaves, green chilly
(optional).
Recipe 2: Pepper Butter Potatoes
Preparation time 5 minutes / cooking time 5
minutes / serves 2
Boil two big potatoes (chandra mukhi) in
water
Cool, peel, cut and chop into medium size slices
Add 2 tsp butter, ½ tsp black pepper and salt to
taste
Mix well and serve
You can also add a handful of boiled green peas
/ carrot to enhance taste for a change
Can also be served with bread.
Recipe 3: Simple Fried Potatoes
Preparation time 5 minutes / cooking time 5
minutes / serves 2
Semi boil two big potatoes (chandra mukhi)
in water with 1 tsp salt
Cool, peel, cut into medium size longitudinal
slices
Heat oil for deep frying
Fry potato slices till golden brown or crispy
NB: Sprinkle salt and pepper for taste, add some
tomato ketchup
Can also be used as sandwich filling
Recipe 4: Potato Bread Balls
Preparation time 15 minutes / cooking time 5
minutes / serves 2
Boil two big potatoes (chandra mukhi) in water
with 1 tsp salt
Cool, peel, smash and keep aside
In a pan heat 1 tsp of vegetable oil
Add a pinch of jeera
Let it splatter
Add a handful of chopped onion, 1 tsp of green
chilly (optional)
Stir fry till onion turns golden
Add smashed potato and mix well
Add salt and pepper according to taste
Keep aside to cool
Take 1 tsp of corn flour and mix in ¼ cup of
water and make a paste
Take 12 slices of bread (approximately) and cut
out the sides
Now take 1 helping of the potato mix (1 tsp
approx), put in the centre of slice bread
Close up the ends with the corn flour paste (use
only a little amount just to close the ends by
dipping the tip of your finger)
In this way prepare 12 balls with the twelve
slices.
Cover the slices with a wet cloth and keep in
the fridge to set
When required heat oil for deep frying the bread
balls in medium to low flame till golden brown
or crispy
Now it is ready to eat for tiffin / breakfast /
snack with tomato ketchup / green chutney.
Recipe 5: Mashed Potato
Preparation time 10 minutes / cooking time 5
minutes / serves 2-4
Boil two big potatoes (chandra mukhi) in
water with 1 tsp salt
Cool, peel, smash and keep aside
Heat 1 tblsp of vegetable oil in a thick bottom
pan
Add a cup of finely chopped onion and fry till
golden brown
Add to it one bowl of chopped mixed boiled
vegetables (carrot, green peas, beans, spinach,
cabbage)
Stir fry for a few minutes
Add the bowl of smashed potato
Add salt and pepper to taste
Mix well on low flame
Add ½ cup of minced green leaves (parsley,
coriander) and mix well
Bring it down from fire
Add 2-3 helpings of mayonnaise and mix well
Now use this as a bread filling or a chicken
roast dip
Or just pack it off as a lip smacking tiffin
/ breakfast / snack
Recipe 6: Por-Art-O
Preparation time 10 minutes / cooking time 5
minutes / serves 2-4
Boil two big potatoes (chandra mukhi) in water
with 1 tsp salt
Cool, peel, mash and keep aside
Heat 1 tblsp of vegetable oil in a thick bottom
pan
Add a cup of finely chopped onion and fry till
golden brown
Add to it one bowl of chopped mixed boiled
vegetables (carrot, green peas, beans, spinach,
cabbage)
Stir fry for a few minutes
Add the bowl of mashed potato
Add salt and pepper to taste
Mix well on low flame
Add ½ cup of minced green leaves (parsley,
coriander) and mix well
Bring it down from fire
Add 2-3 helpings of mayonnaise and mix well
Make dough
Roll out up to a thickness of about ½ in
(approx)
Use a cutter (any shape available) to cut out
shapes of it
In a thick-bottomed pan melt a little butter
(about 2 tsp)
Toast fry the shaped smashed potato on either
side in low/medium flame till reddish brown
Ready to pack it off with baked beans for tiffin
/ breakfast / snacks.
Recipe 7: Potato Roll
Preparation time 10 minutes / cooking time 5
minutes / serves 2-4
Cut into small pieces available vegetables like
beans, carrot, beat root (optional)
Add some green peas too and boil
Chop 1 medium size capsicum finely
Chop 1 medium size onion finely
Heat 1 tblsp oil in a pan
Stir fry finely chopped onion for 2-3 minutes
till golden brown
Add the chopped and boiled vegetables,
mashed potato and mix well
Add the capsicum pieces
Mix well on low/medium flame
When ready take a generous helping and put in a
paratha (add sauce of your choice)
Roll and cover with aluminum foil
Ready to pack it off for healthy tiffin /
breakfast / snacks
Recipe 8: Golden Coins
Preparation time 10 minutes / cooking time 5
minutes / serves 2-4
Boil two big potatoes (chandra mukhi) in
water with 1 tsp salt
Cool, peel, smash and keep aside
Heat 1 tblsp of vegetable oil in a thick bottom
pan
Add a cup of finely chopped onion and fry till
golden brown
Add to it one bowl of chopped mixed boiled
vegetables (carrot, green peas, beans, spinach,
cabbage)
Stir fry for a few minutes
Add the bowl of smashed potato
Add salt and pepper to taste
Mix well on low flame
Add ½ cup of minced green leaves (parsley,
coriander) and mix well
Bring it down from fire
Add 2-3 tsp helpings of mayonnaise and mix well
When cool make small balls - place it on your
palm and press lightly with thumb to give the
shape of a coin
Take the batter of egg in a bowl and a cup of
bread crumbs on a plate
Dip the 'coins' in the egg batter, lift quickly,
drain out excess batter, then place it in the
crumbs, cover it fully with crumbs
Cover with a wet cloth and keep in the fridge
When required take out of fridge and deep fry
till golden brown
Ready to pack it off for healthy tiffin /
breakfast / snacks with any sauce of choice
Recipe 9: Tasty Potato Cubes
Preparation time 5-7 minutes / cooking time 5
minutes / serves 2-4
Boil 500 gm potatoes in water with 1 tsp of salt
and 1 tsp of sugar
When boiled, drain the water thoroughly
Cool, peel and cut into cubes (1 cm approx)
Add ½ cup cornflower powder or arrowroot, ½ tsp
of kala jeera and salt to taste
Mix well, if required add a little amount of
water (2-3 tsp) so that cornflower mixes well
Now heat oil for deep fry
Add the potato cubes and fry on medium/high
flame till the cubes start getting a golden hue
(do not fry till golden brown)
Take it down from fire
Sprinkle a pinch of black salt over it
Pack off for lip smacking tiffin / snacks
